Ingredients

  • 1 lb. boneless chicken, seasoned with salt, pepper and paprika
  • 2 Tbsp. olive oil
  • 1 large green pepper, diced
  • 1 large onion, diced
  • 16 oz. can tomato sauce
  • 1/2 c. water
  • 1 beef bouillon
  • 2 tsp. chili powder
  • 1 tsp. garlic powder
  • 1/4 tsp. salt
  • 1 bag cooked rice (Boil 'n Bag rice)
  • 1 large can peas

Method

  • Spray skillet with Pam.
  • Brown seasoned chicken 4 minutes on each side or until cooked.
  • Remove from skillet; set aside.
  • Heat oil and saute onions and peppers until onions are soft.
  • Add tomato sauce, water and other ingredients, except rice and peas. Stir well; simmer, covered, 15 minutes.
  • While this cooks, tear chicken in pieces.
  • Add chicken, rice and peas.
  • Heat until warm through.
