Ingredients

  • 1 lb Rhubarb finely minced
  • 3 c. Granulated sugar
  • 1/2 tsp Five spice pwdr
  • 1/4 c. Minced candied ginger Dash warm pepper sauce
  • 3 Tbsp. Lemon juice

Method

  • In a saucepan, combine rhubarb, sugar, five spice pwdr, ginger, warm pepper sauce and lemon juice; blend well.
  • Place over low heat, stirring constantly till sugar dissolves.
  • Bring to boil, skim off foam and cook over medium heat, stirring frequenly, till mix becomes transparent and thickens, about 15 to 20 min.
  • Ladle into warm, sterilized jars; seal.
  • Makes about four 6 oz jars.
