Ingredients

  • 220 g butter
  • ⅓ cup caster sugar
  • 2¼ cups plain flour, sifted
  • 185 g ground almonds
  • 1 teaspoon imitation vanilla essence
  • vanilla sugar

Method

1. Beat butter and sugar in a bowl with an electric mixer until creamy. Beat in lemon rind. Fold in sifted flour, ground almonds and vanilla essence. Mix to form a soft dough. Wrap in greaseproof paper and chill until firm.

2. Shape into rolls as thick as a thumb and cut into 2.5 cm sections. Form these into 5 cm long rolls and shape into crescents.

3. Place on greased baking trays and bake at 150°C for 12 minutes, or until only just lightly coloured. While still hot, coat with vanilla sugar. Store in an airtight container.
