Ingredients

  • 1 head Cauliflower, Cored, Separated Into Florets
  • 2 whole Eggs, Beaten
  • 1 teaspoon Salt And Black Pepper To Taste
  • 1/2 cups Panko Or Plain Bread Crumbs
  • 1 Tablespoon Fresh Chopped Parsley
  • 1- 1/4 cup Aged White Cheddar Cheese, Grated
  • FOR THE SAUCE (optional):
  • 3 Tablespoons Mayonnaise
  • 1 Tablespoon Ketchup
  • 1 teaspoon Dill
  • 1 Tablespoon Hot Sauce, Your Choice

Method

  • Preheat oven to 400 degrees F.
  • In a food processor, add cauliflower florets and pulse several times.
  • Add beaten eggs, salt, black pepper, panko, and parsley.
  • Process just until combined.
  • Remove and transfer to a large mixing bowl.
  • Add grated cheese and stir with a sturdy spatula.
  • Using a scoop, form balls and place in a mini 24-count muffin tin (I use nonstick).
  • Bake 15 minutes or until golden brown.
  • For the serving sauce, if using, in a small mixing bowl add all ingredients and stir well to combine.
  • Serve on the side.
