Ingredients

  • 4 x Pork legs
  • 450 gm Mixed vegetables, (1lb)
  • 450 gm New potatoes, (1lb)
  • 3 Tbsp. HP sauce
  • 290 ml Water, (10fl ounce)
  • 290 ml Tomato ketchup, (10fl ounce)
  • 3 Tbsp. Worcestershire sauce
  • 3 Tbsp. Soya sauce
  • 3 Tbsp. Lime juice
  • 225 gm Sugar, (8oz)
  • 1/2 Tbsp. Tabasco
  • 1/8 lt Oil
  • 2 x Garlic cloves, finely minced Salt and pepper

Method

  • Mix all the ingredients for the barbecue sauce.
  • Bring to the boil and let simmer for about 30 min.
  • Take off the heat and leave to cold.
  • Ready to use when cool.
  • Boil the legs till tender, then, marinate with the barbecue sauce for about 24 hrs.
  • To be baked in the oven for about 20 min at 200C/400F/gas mark 6.
  • To be served in a frying pan with the mixed saute/fry vegetables and boiled new potatoes.
