Ingredients

  • 1 lb. boneless round steak
  • 1 Tbsp. cooking oil
  • 1/2 c. onion, chopped
  • 4 c. beef broth
  • 2 Tbsp. vinegar
  • 1/4 tsp. pepper
  • 8 oz. noodles
  • 3 Tbsp. flour

Method

  • Cut meat into cubes.
  • In a large saucepan brown half of the meat in hot oil.
  • Remove the meat from the pan.
  • Brown the remaining meat with onion and garlic (if desired).
  • Drain fat. Return all meat to pan.
  • Stir in beef broth, vinegar, and pepper. Bring to a boil.
  • Reduce heat, simmer for 1 hour.
  • Stir noodles into broth mixture.
  • Bring to boiling.
  • Reduce heat.
  • Cook for 30 minutes.
  • Drain meat and noodles.
  • Reserve 2 1/2 cups of the liquid.
  • Return liquid to pan.
  • Stir together 1/4 cup beef broth and flour.
  • Stir into mixture in pan.
  • Cook and stir till thickened and bubbly.
  • Stir in beef and noodles.
  • Heat thoroughly.
  • Makes 4 servings.
