Ingredients

  • 1 12 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 cup light brown sugar
  • 12 cup butter (unsalted and room temp)
  • 1 egg
  • 1 cup unsweetened chunky applesauce
  • 12 cup butter (unsalted and room temp)
  • 1 cup confectioners' sugar
  • vanilla extract (optional) or almond extract (optional)

Method

  • 1.
  • Preheat oven to 375.
  • In medium bowl, whisk flour, baking soda, baking powder and salt together.
  • 2.
  • In large bowl, using an electric mixer, beat 1/2 cup butter and brown sugar until fluffy and light.
  • add the egg; beat until smooth (for around 2-4 minutes).
  • with mixer on a low setting, alternate between the flour mixture and applesauce beginning and ending with the flour mixture (DONT OVERMIX).
  • 3.drop cookie dough by heaping tablespoons, 2 inches apart (I did 6 to a cookie sheet).
  • Bake until light/medium golden brown and/or insert a toothpick in the center of the cookie and it comes out clean.
  • around 10-14 minutes.
  • transfer to a wire rack and allow to cool completely.
  • 4.meanwhile make the frosting: in a large bowl, using electric mixer, beat 1/2 cup butter (and prefered extract), gradually add confectioners' sugar until smooth.
  • 5. when cookies are cooled frost cookies with the buttercream and add sprinkles or any type of decorationy.
