Ingredients

  • 1 (15-ounce) can Great Northern beans, rinsed and drained
  • 1(15-ounce) can black beans, rinsed and drained
  • 1 1/4 cups peeled, seeded, and chopped tomato
  • 3/4 cup diced sweet red pepper
  • 3/4 diced sweet yellow pepper
  • 3/4 cup thinly sliced green onions
  • 1/2 salsa
  • 1/4 cup red wine vinegar
  • 2 Tablespoon chopped fresh cilantro
  • 1/4 teaspoon salt
  • 1/8 teaspoon freshly ground pepper
  • 1 head, finely shredded romaine lettuce

Method

  • 1) Combine beans and chopped tomato in a large bowl, tossing gently.Add red pepper, yellow pepper, and green onions, tossing to combine.
  • 2) Combine salsa and next 4 ingredients; stir with a wire whisk until well blended. Pour over bean mixture, and toss gently.
  • 3) Line a large serving bowl with shredded lettuce; top with bean mixture.
