Ingredients

  • 1 lb dry lasagna noodles
  • 15 oz ricotta cheese
  • 1 large egg
  • 4 oz shredded motzarella cheese
  • 10 roma tomatoes, thin sliced
  • 2 can spinach (drained and squeezed) 13.5oz. each
  • 2 24 oz. jars spagetti sauce (may not use all)
  • 1 grated parmesan for sprinkling
  • 1 dried basil for sprinkling
  • 12 oz shredded motzarella cheese

Method

  • Cook lasagna noodles according to package directions.
  • Do not rinse!
  • Just drain.. you need the stickyness of the starch to stay on the noodles to aid in rolling.
  • Preheat oven to 375F
  • Using a large baking sheet.. spread a thin layer of spagetti sauce over entire sheet.
  • Set aside.
  • Line work surface in wax paper or parchment paper.
  • Lay out each noodle onto paper in a single file.
  • Spread a couple tbl.
  • Of ricotta mix along each noodle as pictured.
  • Its ok if u dont cover the entire thing.
  • Lay out a few slices of tomato across the ricotta.
  • Leaving a small space between each and leaving a small space at each end.
  • To make for easy rolling.
  • Break apart small pieces of spinach and sprinkle accross tomatoes.
  • Sprinkle basil across the length of the noodle.
  • Just a light sprinkle.
  • Do the same with the parmesan.
  • Really as much as you would like.
  • Gently but firmly.. starting at one end, roll the lasagna noodle up.
  • Not to tight or it will all push out the sides.
  • Transfer roll to on top of prepared baking sheet.
  • Repeat until out of ingredients.
  • Now spoon sauce over each roll, as much as u would like.
  • But i did a big serving spoonful on each.
  • Now sprinkle motzarella cheeese on top of each.
  • About a small handful.
  • More if u like more, but itll get messy if u put to much sauce/cheese.
  • Again take the basil and parmesan and give another light sprinkle to the top of each roll..
  • Bake in oven for 10-15 min.
  • Closest to heat.
  • Just long enough to heat it up and let the cheese melt.
  • If the ricotta is starting to ooze out.. its done!
  • :)
  • Transfer to serving plates.
  • And serve!
  • I served mine with homemade garlic bread and a nice italian side salad.
