Ingredients
- 125 g (4 oz) butter, chopped
- 125 g (4 oz) Cheddar, grated
- 2 tablespoons grated Parmesan
- 1 cup (125 g/4 oz) plain flour
- 2 tablespoons self-raising flour
- pinch of cayenne pepper
- 2 teaspoons lemon juice
Method
1. Place the butter, cheeses, flours, cayenne pepper, lemon juice and a pinch of salt in a food processor. Process for 60 seconds, or until the mixture comes together and forms a ball.
2. Gently knead the mixture for 2 minutes on a lightly floured surface. Form the dough into a sausage shape about 3 cm (1 1/4 inches) in diameter. Wrap in plastic wrap, then in foil and freeze for 30 minutes. Remove and leave at room temperature for 5 minutes.
3. Preheat the oven to moderate 180°C (350°F/Gas 4). Line two baking trays with baking paper.
4. Slice the dough into thin slices, about 3 mm (1/8 inch) thick, and place on the trays, allowing a little room for spreading. Bake the biscuits for 9-10 minutes, or until golden. Allow to cool on the trays.
