Ingredients

  • 6 1/2 tablespoons butter softened
  • 1/3 cup firmly packed brown sugar
  • 2 eggs
  • 2/3 cup ground almonds
  • 1/2 cup self rising flour
  • 3 tablespoons all-purpose flour
  • 6 ounces frozen cherries halved
  • 1/2 tablespoon slivered almonds
  • 2 teaspoons raw sugar
  • ricotta fresh, to serve
  • honey to serve

Method

  • Preheat oven to 350°F. Grease and line a 7 x 3 1/2 inch loaf pan with parchment paper.
  • Cream butter and sugar until light and fluffy. Add eggs, 1 at a time, beating well after each addition. Add ground almonds, flour and cherries and mix until just combined. Transfer to prepared pan, smooth surface and sprinkle with slivered almonds and raw sugar. Bake for 50 mins, or until a skewer inserted in the center comes out clean. Let cool in pan for 10 mins then transfer to a wire rack to cool completely. Slice.
  • Top with ricotta and drizzle with honey.
