Ingredients

  • 2 Tbsp. oil
  • 1/2 c. celery, sliced on a slant
  • 1 medium onion, cut in eighths
  • 2 Tbsp. soy sauce
  • 1 tsp. sugar
  • 1/2 c. chicken broth
  • 1/2 c. bean sprouts (fresh or canned)
  • 1 c. shredded cooked chicken
  • 1 Tbsp. cornstarch
  • 2 Tbsp. cold water
  • 1 pkg. chow mein noodles

Method

  • Heat oil in a wok or pan and stir-fry celery and onion over high heat for 2 to 3 minutes, separating the onion "layers."
  • Add soy sauce, sugar and broth; bring to a boil.
  • Add bean sprouts and chicken and stir to combine.
  • Dissolve cornstarch in water and add gradually to sauce.
  • Simmer gently until it thickens.
  • Serve over chow mein noodles.
  • Serves 4.
