Ingredients
- 2 Tbsp. oil
- 1/2 c. celery, sliced on a slant
- 1 medium onion, cut in eighths
- 2 Tbsp. soy sauce
- 1 tsp. sugar
- 1/2 c. chicken broth
- 1/2 c. bean sprouts (fresh or canned)
- 1 c. shredded cooked chicken
- 1 Tbsp. cornstarch
- 2 Tbsp. cold water
- 1 pkg. chow mein noodles
Method
- Heat oil in a wok or pan and stir-fry celery and onion over high heat for 2 to 3 minutes, separating the onion "layers."
- Add soy sauce, sugar and broth; bring to a boil.
- Add bean sprouts and chicken and stir to combine.
- Dissolve cornstarch in water and add gradually to sauce.
- Simmer gently until it thickens.
- Serve over chow mein noodles.
- Serves 4.
