Ingredients

  • 4 chicken breasts, cooked and deboned
  • 1 tsp. salt
  • 1 1/2 tsp. cumin
  • 1/2 c. diced onion
  • 1/4 c. diced pepper
  • 2 Tbsp. butter
  • 2/3 c. broth
  • 1 (4 oz.) can chopped green chilies, undrained
  • 2/3 chopped tomato
  • 1 tsp. cumin
  • 1/4 tsp. salt and pepper

Method

  • Chop chicken breasts (with salt and cumin) in food processor. Saute onion and pepper in butter.
  • Add chicken, broth, chilies, tomato, cumin, salt and pepper.
  • Simmer, uncovered, 10 minutes. Spoon 1 tablespoon mixture on tortilla chips and top with grated cheese.
  • Broil until cheese melts.
