Ingredients

  • 2 lb. chicken nuggets
  • 3/4 c. pineapple juice
  • 1/4 c. soy sauce
  • 3/4 c. oil
  • 1/2 lb. cherry tomatoes
  • 3 green peppers, cut into squares
  • 2 onions, cut in squares
  • 1/2 lb. mushrooms

Method

  • Combine pineapple juice, soy sauce and oil in a baking dish and marinate chicken in the mixture for 3 hours.
  • Alternate chicken with tomatoes, green peppers, onions and mushrooms on skewers.
  • Broil for 10 to 15 minutes, turning once, or until chicken is cooked through.
  • To barbecue, cook 5 inches from flame using marinade to baste.
  • Serve over rice or pasta.
