Ingredients

  • 1 1/2 lb. lean pork, cut into 2-inch strips
  • 2 Tbsp. fat
  • 1/4 c. water
  • 2 Tbsp. cornstarch
  • 1/2 tsp. salt
  • 1/4 c. brown sugar
  • 1/3 c. vinegar
  • 1 c. pineapple juice
  • 1 Tbsp. soy sauce
  • 3/4 c. green peppers, cut into thin strips
  • 1/4 c. thinly sliced onion
  • 1 (No. 2) can pineapple chunks

Method

  • Brown pork in hot fat.
  • Add water; cover and simmer for 1 hour.
  • Combine cornstarch, salt, brown sugar, vinegar, pineapple juice and soy sauce; cook, stirring constantly, until slightly thickened.
  • Pour sauce over hot pork; let stand for 10 minutes. Add green peppers, onion and pineapple chunks; cook 5 minutes. Yields 6 servings.
