- 1 1/2 lb. lean pork, cut into 2-inch strips
- 2 Tbsp. fat
- 1/4 c. water
- 2 Tbsp. cornstarch
- 1/2 tsp. salt
- 1/4 c. brown sugar
- 1/3 c. vinegar
- 1 c. pineapple juice
- 1 Tbsp. soy sauce
- 3/4 c. green peppers, cut into thin strips
- 1/4 c. thinly sliced onion
- 1 (No. 2) can pineapple chunks
Method
- Brown pork in hot fat.
- Add water; cover and simmer for 1 hour.
- Combine cornstarch, salt, brown sugar, vinegar, pineapple juice and soy sauce; cook, stirring constantly, until slightly thickened.
- Pour sauce over hot pork; let stand for 10 minutes. Add green peppers, onion and pineapple chunks; cook 5 minutes. Yields 6 servings.
