Ingredients

  • 3 heaping Tbsp. cocoa
  • 2 Tbsp. flour
  • 1/8 tsp. salt
  • 3/4 c. sugar
  • 2 c. milk
  • 3 egg yolks
  • 1 tsp. vanilla
  • 2 Tbsp. butter, optional

Method

  • Mix
  • flour, salt, sugar and cocoa.
  • Beat egg yolks well and add the milk, beating until well mixed.
  • Then add gradually
  • to the dry ingredients, mixing well.
  • Cook until thickened (easier if double boiler is used).
  • Be sure to cook several minutes after
  • the mixture
  • thickens,
  • stirring
  • constantly. Remove
  • from fire,
  • add vanilla and butter.
  • Beat well.
  • Pour into baked pie shell and top with meringue or whipped cream.
