Ingredients
- 1 c. sugar
- 3/4 c. flour
- 3 c. milk
- 5 eggs
- 1/4 c. oleo
- 1 tsp. vanilla
- pinch of salt
- 1 1/2 c. coconut
- 1/2 tsp. cream of tartar
- 5 tsp. water
- 5 tsp. sugar
- 1 cooked pie shell
Method
- Combine sugar and flour; separate eggs.
- Add yolks, oleo and salt, cooking in a double boiler until thick.
- Add vanilla and coconut.
- Pour into pie shell.
- Mix egg whites, cream of tartar and water.
- Beat until whites peak; slowly add sugar.
- Cover filling in shell with the meringue mixture and bake at 300° until lightly browned.
