Ingredients

  • 1 c. sugar
  • 3/4 c. flour
  • 3 c. milk
  • 5 eggs
  • 1/4 c. oleo
  • 1 tsp. vanilla
  • pinch of salt
  • 1 1/2 c. coconut
  • 1/2 tsp. cream of tartar
  • 5 tsp. water
  • 5 tsp. sugar
  • 1 cooked pie shell

Method

  • Combine sugar and flour; separate eggs.
  • Add yolks, oleo and salt, cooking in a double boiler until thick.
  • Add vanilla and coconut.
  • Pour into pie shell.
  • Mix egg whites, cream of tartar and water.
  • Beat until whites peak; slowly add sugar.
  • Cover filling in shell with the meringue mixture and bake at 300° until lightly browned.
