Ingredients
- 1 red bell pepper
- 2 c. corn
- 1 1/2 tsp. minced jalapeno pepper
- 1 clove garlic, minced
- 1/4 c. chopped cilantro
- 1 Tbsp. balsamic vinegar or rice vinegar
- 1/2 tsp. salt
- 2 Tbsp. chopped chives
Method
- Place pepper directly over gas flame until blackened and blistered all over.
- Cool.
- Peel.
- Chop coarsely.
- In food processor combine pepper, corn, jalapeno and garlic.
- Process until finely chopped.
- Add cilantro, chives, vinegar and salt.
- Makes 2 cups.
