Ingredients

  • 3 tbsp. olive oil
  • 1 tbsp. fresh lemon juice
  • 2 tsp. minced fresh oregano leaves
  • 1/4 tsp. salt
  • 1/4 tsp. Freshly ground pepper
  • 4 medium ripe tomatoes
  • 2 medium green bell peppers
  • 1 large cucumber
  • 1 c. thinly sliced onion
  • 4 oz. feta cheese
  • 8 calamata olives (Greek olives)

Method

  • Whisk dressing ingredients in a large serving bowl until blended.
  • Add remaining ingredients and toss gently to mix and coat.
  • Serve or cover and refrigerate up to 24 hours.
  • Bring to room temperature before serving.
