- 3 tbsp. olive oil
- 1 tbsp. fresh lemon juice
- 2 tsp. minced fresh oregano leaves
- 1/4 tsp. salt
- 1/4 tsp. Freshly ground pepper
- 4 medium ripe tomatoes
- 2 medium green bell peppers
- 1 large cucumber
- 1 c. thinly sliced onion
- 4 oz. feta cheese
- 8 calamata olives (Greek olives)
Method
- Whisk dressing ingredients in a large serving bowl until blended.
- Add remaining ingredients and toss gently to mix and coat.
- Serve or cover and refrigerate up to 24 hours.
- Bring to room temperature before serving.
