Ingredients
- 1 1/2 c. cooked rice
- 2 c. milk, divided
- 1/3 c. sugar (a little bit less is o.k.)
- 1/4 tsp. salt
- 1 egg, beaten
- 1/3 c. golden raisins
- 1 Tbsp. butter or margarine
- 1/2 tsp. vanilla extract
- dash of nutmeg or cinnamon (optional)
Method
- Combine rice, 1 1/2 cups of the milk, sugar and salt in a heavy saucepan.
- Cook over medium heat, stirring occasionally, until thick and creamy, 15 to 20 minutes.
- Blend remaining 1/2 cup of milk and egg.
- Stir into rice mixture.
- Add raisins.
- Cook 2 minutes longer, stirring occasionally.
- Add butter and vanilla. Sprinkle with nutmeg or cinnamon, if desired.
