Ingredients

  • 1 1/2 c. cooked rice
  • 2 c. milk, divided
  • 1/3 c. sugar (a little bit less is o.k.)
  • 1/4 tsp. salt
  • 1 egg, beaten
  • 1/3 c. golden raisins
  • 1 Tbsp. butter or margarine
  • 1/2 tsp. vanilla extract
  • dash of nutmeg or cinnamon (optional)

Method

  • Combine rice, 1 1/2 cups of the milk, sugar and salt in a heavy saucepan.
  • Cook over medium heat, stirring occasionally, until thick and creamy, 15 to 20 minutes.
  • Blend remaining 1/2 cup of milk and egg.
  • Stir into rice mixture.
  • Add raisins.
  • Cook 2 minutes longer, stirring occasionally.
  • Add butter and vanilla. Sprinkle with nutmeg or cinnamon, if desired.
