- 1 pkg. cornbread stuffing mix
- 1 1/2 c. chicken stock
- 1 can cream of mushroom soup
- 1 1/2 c. chopped onions
- 1/4 c. mayonnaise
- 1 stick margarine, melted
- 3 1/2 c. cooked chicken, diced
- 1 (4 oz.) can mushrooms and juice
- 1 1/2 c. celery, diced
- 1/8 tsp. cayenne pepper
- salt and pepper to taste
Method
- Blend melted butter and stuffing mix.
- Line a greased 5 x 9-inch dish with half of crumb mixture.
- Combine all other ingredients and pour over crumbs.
- Top with other half of crumbs. Bake at 325° for 45 minutes.
- Makes 8 to 10 servings.
