Ingredients

  • 1 pkg. cornbread stuffing mix
  • 1 1/2 c. chicken stock
  • 1 can cream of mushroom soup
  • 1 1/2 c. chopped onions
  • 1/4 c. mayonnaise
  • 1 stick margarine, melted
  • 3 1/2 c. cooked chicken, diced
  • 1 (4 oz.) can mushrooms and juice
  • 1 1/2 c. celery, diced
  • 1/8 tsp. cayenne pepper
  • salt and pepper to taste

Method

  • Blend melted butter and stuffing mix.
  • Line a greased 5 x 9-inch dish with half of crumb mixture.
  • Combine all other ingredients and pour over crumbs.
  • Top with other half of crumbs. Bake at 325° for 45 minutes.
  • Makes 8 to 10 servings.
