Ingredients
- 1 eggplant
- 1 onion, chopped
- 1 can cream of mushroom soup
- 1/2 c. cracker crumbs
- 1 1/2 c. grated cheese
- salt and pepper to taste
Method
- Peel and cube eggplant.
- Cook with salt and onion in small amount of water until soft.
- Drain and reserve liquid.
- Layer and end with cheese.
- Pour reserved liquid on top.
- Bake at 350° for 30 minutes.
