Ingredients

  • 1 mango, pureed
  • 2 limes, rind and pith removed
  • 2 spring onions
  • 6 to 8 cherry tomatoes, halves
  • 1 dash dried mint
  • 1 dash dried red chillies

Method

  • Segment your lime and break up carefully into small chunks.
  • Finely chop the spring onions, using mostly the green parts.
  • Place lime chunks, spring onions and cherry tomatoes in a bowl and add the pureed mango.
  • Add the mint and chillies and stir.
  • Leave in the fridge for 1/2 hour to allow the flavors to develop, then serve with cold cuts and peppery salad leaves.
