Ingredients

  • 2 lb. tomatillos
  • 3 Serrano chiles
  • 1 Tbsp. chopped onion
  • 1 clove garlic
  • 1 Tbsp. chopped cilantro
  • oil
  • dash of soda
  • dash of sugar
  • salt and pepper
  • White Sauce
  • 1 c. whipping cream
  • grated Jack or Cheddar cheese
  • 12 corn tortillas
  • hot sauce
  • 2 c. cooked chicken, shredded
  • 7 Tbsp. butter
  • 2 Tbsp. chopped onion
  • 1 clove garlic
  • 1/2 c. flour
  • 2 c. milk
  • 1 tsp. Worcestershire sauce
  • salt and pepper

Method

  • Remove papery husks from tomatillos.
  • Wash tomatillos and chiles well.
  • Cook, covered, in a little boiling water until tender, about 15 minutes.
  • Remove stems and seeds from chiles. Place chiles and drained tomatillos in blender container.
  • Add onion, garlic and cilantro and blend until pureed.
