Ingredients

  • 3 medium onions, sliced or pearl onions
  • 2 lb. good stew meat
  • 1 large can tomatoes
  • 6 carrots, cut in 1-inch pieces
  • 1 c. celery, cut in 1-inch pieces
  • 2 tsp. salt
  • 1 Tbsp. sugar
  • 3 Tbsp. plus tapioca
  • 3/4 c. bread crumbs

Method

  • Mix all of ingredients in casserole to be covered, sprinkling bread crumbs on last.
  • Cook stew in oven 5 hours at 250°.
  • Can dress this recipe up with a little Burgundy wine, mushrooms, potatoes or dumplings added near end of cooking time.
  • If using potatoes, add at beginning.
