Ingredients

  • 1 large bunch broccoli, coarsely chopped (about 6 c.)
  • 6 Tbsp. butter
  • 6 Tbsp. flour
  • 2 c. milk
  • 1 c. grated Mozzarella cheese
  • 2 eggs
  • 1 tsp. thyme
  • 1 tsp. salt
  • dash of white pepper
  • 1/3 c. saltine crumbs

Method

  • Preheat oven to 350°.
  • Cook broccoli until just tender.
  • Drain and set aside.
  • In the same pan, melt butter and blend in flour. Add milk, cooking and stirring, until thickened.
  • Add cheese and stir until melted.
  • Beat eggs lightly.
  • Add some cream sauce to the eggs; blend and add back to the sauce.
  • Add spices.
  • Fold in broccoli and pour into a greased 2-quart casserole dish.
  • Top with saltines and bake 30 minutes.
