Ingredients
- 3/4 c. cooking oil
- salt and pepper to taste
- 6 c. young green ramps, cut in 1-inch pieces
Method
- In a large cast-iron frying pan, heat cooking oil; add ramps. Cover and cook on lowest heat.
- Stir once or twice; fry 35 minutes or until tender.
- Best served with fried fatback, or bacon strips, scrambled eggs, fried potatoes and corn bread.
- Serves 4 to 6.
