Ingredients

  • 1/3 cup lime juice
  • 1/3 cup granulated sugar
  • 1 tablespoon lime zest
  • 1/4 cup coconut liqueur
  • 1 papaya thinly sliced
  • 4 starfruit thinly sliced
  • 2 mangos thinly sliced
  • 2 tablespoons fresh mint chopped

Method

  • Stir 1 cup water, lime juice, sugar and lime zest over low heat for 2-3 mins, until sugar dissolves. Bring to a boil, reduce heat and simmer for 10-12 mins, until thickened slightly. Add liqueur. Let cool.
  • Combine fruit and mint in a large bowl. Toss with syrup around 15 mins before serving.
