Ingredients
- 1/3 cup lime juice
- 1/3 cup granulated sugar
- 1 tablespoon lime zest
- 1/4 cup coconut liqueur
- 1 papaya thinly sliced
- 4 starfruit thinly sliced
- 2 mangos thinly sliced
- 2 tablespoons fresh mint chopped
Method
- Stir 1 cup water, lime juice, sugar and lime zest over low heat for 2-3 mins, until sugar dissolves. Bring to a boil, reduce heat and simmer for 10-12 mins, until thickened slightly. Add liqueur. Let cool.
- Combine fruit and mint in a large bowl. Toss with syrup around 15 mins before serving.
