Ingredients

  • 1 lb pork tenderloin
  • 14 teaspoon salt
  • 18 teaspoon pepper
  • 1 teaspoon oil
  • 13 cup peach chutney (sub mango chutney)
  • 3 tablespoons orange juice
  • 1 teaspoon ginger, fresh grated
  • 12 teaspoon five-spice powder

Method

  • Trim fat from loin.
  • Cut crosswise into 8 slices.
  • Flatten slightly with palm of hand.
  • Sprinkle with salt & pepper.
  • Heat oil in medium skillet over medium-high heat.
  • Cook pork about 4 minutes, turning halfway.
  • Stir in remaining ingredients, reduce heat.
  • Cover and simmer 4-6 minutes or until 160.
  • Set aside pork and continue to cook sauce for 1-2 minutes, stirring constantly.
  • Serve over pork.
