Ingredients

  • 4 ripe avocados
  • 1/2 cup finely chopped red onion
  • 2 medium tomatoes, seeded and chopped
  • 1 to 2 fresh green chilies (according to taste), seeded and chopped
  • 1/2 cup fresh coriander, chopped
  • 1/4 to 1/2 cup extra-virgin olive oil
  • Coarse salt and freshly ground pepper to taste
  • Juice 1/2 lime or lemon

Method

  • Halve and pit the avocados.
  • Skin the halves, cut them into small pieces and place in a bowl.
  • Add the remaining ingredients, except the lime juice, and mix together lightly, so that the mixture is slightly chunky.
  • Squeeze the lime or lemon juice over the top and serve.
