Ingredients
- 250 g butter, softened
- ½ cup sugar
- 1 egg
- 1 teaspoon imitation vanilla essence
- 1½ cups plain flour
- ½ teaspoon baking powder
- ¼ teaspoon bicarbonate of soda
- ½ cup finely ground hazelnuts
- about 30 whole hazelnuts
Method
1. Beat butter and sugar in a bowl with an electric mixer until light and fluffy. Beat in egg, egg yolk and vanilla essence. Sift in flour, baking powder and soda. Add ground hazelnuts; mix well.
2. Roll level tablespoonfuls of mixture into rounds, place on greased baking trays, allow room for spreading. Flatten each slightly. Place a whole hazelnut into the centre of each biscuit.
3. Bake at 180°C for 12–15 minutes, or until just lightly golden. Cool on trays for 2–3 minutes. Transfer to a wire rack to cool completely. Store in an airtight container.
