Ingredients

  • 1 c. fine grained wheat
  • 3 c. boiling water
  • 1 bunch finely chopped scallions
  • 2 c. chopped parsley
  • 4 Tbsp. vinegar
  • 1/2 c. chopped radishes
  • 3 Tbsp. olive oil
  • 1 tsp. sharp mustard
  • romaine lettuce leaves
  • vegi salt to taste

Method

  • Place the wheat in a large bowl or pan and pour in the boiling water.
  • Let soak for about 30 minutes or until tender.
  • Drain the wheat and combine with the other ingredients, except the lettuce leaves.
  • Chill.
  • Heap salad on a plate and arrange the romaine leaves around the sides, so they can be used as scoops.
