- 1 c. fine grained wheat
- 3 c. boiling water
- 1 bunch finely chopped scallions
- 2 c. chopped parsley
- 4 Tbsp. vinegar
- 1/2 c. chopped radishes
- 3 Tbsp. olive oil
- 1 tsp. sharp mustard
- romaine lettuce leaves
- vegi salt to taste
Method
- Place the wheat in a large bowl or pan and pour in the boiling water.
- Let soak for about 30 minutes or until tender.
- Drain the wheat and combine with the other ingredients, except the lettuce leaves.
- Chill.
- Heap salad on a plate and arrange the romaine leaves around the sides, so they can be used as scoops.
