Ingredients

  • 2 packages dry yeast
  • 3 1/2 cups rolled oats
  • 2 cups whole wheat flour
  • 1/4 cup wheat germ honeyed
  • 1/4 cup wheat bran unprocessed, optional
  • 1/2 cup clover honey
  • 1/2 teaspoon salt
  • 4 cups warm water
  • 8 cups bread flour

Method

  • In large bowl combine honey, 1 cup warm water and yeast. Allow to proof. Add remaining ingredients with enough bread flour to make a nice workable dough. Knead by hand 6 to 10 minutes or with dough hook and electric mixer for 4 minutes. Place in well oiled bowl to rise until double. Punch down and allow to rise again. Pinch down and divide into 3 equal pieces.
  • Form into loaves and place in 3 well oiled loaf pans dusted with corn meal. Allow to rise until almost double and bake at 350 degrees for 35 to 40 minutes until golden brown and hollow in sound when tapped.
  • Brush top with melted butter and allow to cool on a rack. 3 loaves.
