Ingredients

  • 4 c. ground onions
  • 1 medium head cabbage, ground (optional)
  • 12 green peppers, ground
  • 6 red peppers, ground
  • 10 green tomatoes, ground
  • 6 c. sugar
  • 1 Tbsp. celery seed
  • 1 1/2 tsp. turmeric
  • 2 Tbsp. mustard seed
  • 4 c. vinegar

Method

  • Stir onions, cabbage, peppers and tomatoes together.
  • Sprinkle with 1/2 cup salt and soak overnight.
  • Place in colander and wash off under faucet.
  • Drain and combine sugar, celery seed, turmeric, mustard seed and vinegar.
  • Heat this mixture.
  • Pour over vegetables.
  • Heat to boiling and cook 5 minutes.
  • May be cold packed before canning.
  • Process about 10 minutes.
  • Makes 8 pints. (Two cucumbers may be added also.)
