Ingredients
- 4 c. ground onions
- 1 medium head cabbage, ground (optional)
- 12 green peppers, ground
- 6 red peppers, ground
- 10 green tomatoes, ground
- 6 c. sugar
- 1 Tbsp. celery seed
- 1 1/2 tsp. turmeric
- 2 Tbsp. mustard seed
- 4 c. vinegar
Method
- Stir onions, cabbage, peppers and tomatoes together.
- Sprinkle with 1/2 cup salt and soak overnight.
- Place in colander and wash off under faucet.
- Drain and combine sugar, celery seed, turmeric, mustard seed and vinegar.
- Heat this mixture.
- Pour over vegetables.
- Heat to boiling and cook 5 minutes.
- May be cold packed before canning.
- Process about 10 minutes.
- Makes 8 pints. (Two cucumbers may be added also.)
