Ingredients

  • 4 cooked potatoes
  • 1/3 c. diced celery
  • 1/4 c. minced onion
  • 1/4 c. diced green pepper
  • 1/4 c. vinegar
  • 1 tsp. salt
  • 1/8 tsp. pepper
  • 1/2 tsp. dry mustard
  • 2 hard-cooked eggs, chopped
  • 1/4 c. hot bacon fat
  • 1 1/2 c. grated cheese (optional)

Method

  • Cook potatoes as directed for boiled potatoes.
  • Drain.
  • Cube potatoes and combine with celery, green pepper, vinegar, seasoning and chopped eggs.
  • Toss lightly to mix.
  • Add bacon fat.
  • Spoon into an 8-inch glass dish.
  • Cook with microwave for 9 minutes. Top with cheese.
  • Cook 4 minutes longer.
  • Recipe yields 6 servings.
