Ingredients

  • 1 1/2 cups Beef stock
  • 3 tablespoons Tomato paste
  • 1/2 teaspoon Red pepper flakes
  • 1/2 teaspoon Salt
  • 1 stalk Garlic clove
  • 1 pound Rare roast beef, external fat removed, thinly sliced
  • 2 heads Green peppers, cut in lengthwise slivers
  • 4 loaves Italian bread , 4-5 inches long
  • 1 cup Water
  • 1 cup Giardiniera
  • 1 Bay leaf

Method

  • 1. Combine beef stock, water, tomato paste, red pepper, salt, garlic and a bay leaf in a skillet. Cover and simmer 45 minutes. Adjust seasonings to taste.
  • 2. Add roast beef and green pepper. Cook uncovered for 15 minutes. Heat bread.
