- 1 1/2 cups Beef stock
- 3 tablespoons Tomato paste
- 1/2 teaspoon Red pepper flakes
- 1/2 teaspoon Salt
- 1 stalk Garlic clove
- 1 pound Rare roast beef, external fat removed, thinly sliced
- 2 heads Green peppers, cut in lengthwise slivers
- 4 loaves Italian bread , 4-5 inches long
- 1 cup Water
- 1 cup Giardiniera
- 1 Bay leaf
Method
- 1. Combine beef stock, water, tomato paste, red pepper, salt, garlic and a bay leaf in a skillet. Cover and simmer 45 minutes. Adjust seasonings to taste.
- 2. Add roast beef and green pepper. Cook uncovered for 15 minutes. Heat bread.
