Ingredients

  • 1 stick butter
  • 1/2 c. shortening
  • 2 c. sugar
  • 5 egg yolks
  • 2 c. flour
  • 1 tsp. soda
  • 1 c. buttermilk
  • 1 tsp. vanilla
  • 1 1/3 c. coconut
  • 1 c. chopped pecans
  • 5 egg whites, stiffly beaten

Method

  • Cream butter and shortening.
  • Add sugar and beat until mixture is smooth.
  • Add egg yolks and beat well.
  • Combine sifted flour and soda and add to cream mixture, alternately with buttermilk.
  • Stir in vanilla.
  • Add coconut and pecans.
  • Fold in stiffly beaten egg whites.
  • Grease and flour 3 (8 or 9-inch) cake pans.
  • Pour in batter and bake at 350° until cake looks done, about 25 minutes. Cool and frost with cream cheese frosting.
