Ingredients
- 1 stick butter
- 1/2 c. shortening
- 2 c. sugar
- 5 egg yolks
- 2 c. flour
- 1 tsp. soda
- 1 c. buttermilk
- 1 tsp. vanilla
- 1 1/3 c. coconut
- 1 c. chopped pecans
- 5 egg whites, stiffly beaten
Method
- Cream butter and shortening.
- Add sugar and beat until mixture is smooth.
- Add egg yolks and beat well.
- Combine sifted flour and soda and add to cream mixture, alternately with buttermilk.
- Stir in vanilla.
- Add coconut and pecans.
- Fold in stiffly beaten egg whites.
- Grease and flour 3 (8 or 9-inch) cake pans.
- Pour in batter and bake at 350° until cake looks done, about 25 minutes. Cool and frost with cream cheese frosting.
