Ingredients

  • 1 1/2 lb. large smoked sausage links, cut into 3 to 4-inch pieces
  • 1 c. thinly sliced carrots
  • 1 c. sliced celery
  • 1 envelope (about 1 1/2 oz.) onion soup mix
  • 2 Tbsp. sugar
  • 1 tsp. salt
  • 6 c. boiling water
  • 1 pkg. Betty Crocker hash brown potatoes with onions
  • 1 (10 oz.) pkg. frozen sliced okra, thawed
  • 1/4 tsp. ground oregano
  • 1/4 tsp. red pepper sauce
  • 1 (28 oz.) can whole tomatoes

Method

  • Mix sausage, carrots, celery, onion soup mix, sugar and salt. Add boiling water.
  • Cover and cook 10 minutes.
  • Stir in potatoes, okra, oregano, pepper sauce and tomatoes (with liquid, break up tomatoes with fork).
  • Heat to boiling, stirring frequently.
  • Reduce heat, cover and simmer until vegetables are tender, 30 to 40 minutes.
  • Serve piece of sausage and about 2 cups soup in individual large soup bowl.
  • Serves 6.
