Ingredients

  • 1 1/8 c. finely chopped pecans
  • 1 c. flour
  • 1 stick butter
  • 1 (8 oz.) pkg. cream cheese
  • 1 c. powdered sugar
  • 1 (8 oz.) Cool Whip
  • 2 boxes lemon instant pudding mix
  • 3 c. cold milk
  • 1 tsp. vanilla flavoring

Method

  • Mix 1 cup chopped pecans, flour and butter together.
  • Put in 9 x 13-inch pan and bake at 400° for 20 minutes.
  • Let cool.
  • Let cream cheese soften and cream together with powdered sugar.
  • When blended, mix in 5 ounces of Cool Whip.
  • Spread on top of cooled pecan mixture.
  • Mix pudding mix, milk and vanilla together. Spread over cream cheese mixture.
  • Let chill and then spread on remaining 3 ounces Cool Whip.
  • Sprinkle chopped pecans on top. Keep refrigerated.
  • Try coconut cream pudding instead of lemon. It's good also.
