Ingredients
- 1 lb. lentils
- 1/4 lb. smoked ham
- 1 small onion, minced
- 1/2 c. chopped celery
- 1 bay leaf
- 1 clove garlic, minced
- 1 cube chicken or beef bouillon
- 1 large carrot, grated
- 6 c. water
- 1 lemon
Method
- Soak lentils for 10 minutes; drain and rinse.
- Combine all ingredients in a medium pot.
- Bring to a boil, then simmer until tender, for about 2 hours.
- Season to taste with salt and pepper. Add additional water if necessary.
- Serve with a lemon wedge. Squeeze lemon over soup before eating.
