Ingredients

  • 1 lb. lentils
  • 1/4 lb. smoked ham
  • 1 small onion, minced
  • 1/2 c. chopped celery
  • 1 bay leaf
  • 1 clove garlic, minced
  • 1 cube chicken or beef bouillon
  • 1 large carrot, grated
  • 6 c. water
  • 1 lemon

Method

  • Soak lentils for 10 minutes; drain and rinse.
  • Combine all ingredients in a medium pot.
  • Bring to a boil, then simmer until tender, for about 2 hours.
  • Season to taste with salt and pepper. Add additional water if necessary.
  • Serve with a lemon wedge. Squeeze lemon over soup before eating.
