Ingredients

  • 2 Tablespoons Butter
  • 2 Tablespoons Olive Oil
  • 1 clove Chopped Garlic
  • 1/4 cups Chopped Onion
  • 1/2 cups Milk Or Cream
  • 1/4 teaspoons Curry Powder
  • 1/4 teaspoons Black Pepper
  • 1/4 teaspoons White Pepper
  • 1 Tablespoon Parsley, Plus More For Garnish
  • 1 Tablespoon Basil Plus More For Garnish
  • 2 drops Liquid Smoke
  • 1/4 cups Chopped Sun Dried Tomatoes
  • 2 Tablespoons Sherry
  • 1/4 cups Grated Parmesan Cheese Plus More For Garnish
  • 13 cups Grated Cheddar Cheese
  • 1 pound Mahi-Mahi Or Any White Fish
  • 3/4 cups Bread Crumbs
  • 2 whole Large Lobster Tails

Method

  • In a sauce or frying pan, add butter, oil, garlic and onions.
  • Heat to a low simmer to caramelize onions.
  • Add milk, spices, herbs, liquid smoke, sun dried tomatoes and sherry.
  • Continue heating.
  • Stir in cheeses and mix until melted.
  • Remove from heat, add cubed fish and bread crumbs mix and divide into two.
  • Form into two balls and pack into lobster tails.
  • Place tails in a greased baking dish and garnish tops with some Parmesan cheese, parsley and basil.
  • Cook at 375 degrees F for 35 minutes.
