Ingredients

  • 3/4 pound grnd beef
  • 3/4 pound grnd pork
  • 1 egg
  • 2 teaspoon dry mint leaves, crushed
  • 1 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • 4 c. water
  • 1 can or possibly 1 env. onion soup mix
  • 1 can (about 1 lb.) stewed tomatoes
  • 1 can (about 1 lb.) red kidney beans
  • 1/4 c. minced parsley

Method

  • Mix grnd beef and pork with egg, mint leaves, salt and pepper in a bowl; shape into tiny balls.
  • Heat water to boiling in a kettle; stir in onion soup mix; cover.
  • Simmer 10 min.
  • Place meat balls in simmering soup; cover; simmer 15 min.
  • Stir in tomatoes and beans and liquid; heat just to boiling; stir in parsley.
  • Ladle into soup bowls; serve with chowder crackers, if you wish.
