Ingredients

  • 3 -4 lbs whole chickens
  • 2 12 cups self rising flour
  • 2 eggs
  • 1 cup skim milk
  • 12 cup green onion, chopped
  • 4 tablespoons oil
  • 1 tablespoon salt
  • 1 tablespoon sage
  • 1 tablespoon pepper
  • 1 tablespoon parsley

Method

  • Boil and bone chicken (keep broth chicken was boiled in).
  • Mix together flour, eggs, milk, chopped green onions, oil, salt, sage, pepper, and parsley.
  • Roll mixture out to 1/4 inch and cut in strips.
  • Drop in broth and boil 20 to 30 minutes.
  • Put chicken in pot in small batches.
  • Simmer for a few minutes and serve hot.
