Ingredients

  • 6 cups mesclun salad greens
  • 1 cup red grapefruit sections (about 2 large)
  • 3 tablespoons fresh grapefruit juice
  • 2 teaspoons extra-virgin olive oil
  • 1 teaspoon honey
  • 1/4 teaspoon salt
  • 1/8 teaspoon coarsely ground black pepper
  • 1/4 cup (1 ounce) crumbled feta cheese

Method

  • Combine mesclun and grapefruit sections in a large bowl. Combine grapefruit juice and next 4 ingredients in a small bowl, stirring with a whisk. Pour over salad; toss gently to coat. Divide evenly among plates. Sprinkle each serving with cheese.
