Ingredients

  • 1 c. crabmeat
  • 1 Tbsp. dry bread crumbs
  • 1 Tbsp. chopped onion
  • 1 tsp. salt
  • 2 Tbsp. chopped parsley
  • 1 egg, lightly beaten
  • 12 mushroom caps
  • buttered crumbs
  • Parmesan cheese

Method

  • Mix crabmeat with dry bread crumbs, onion, salt and parsley. Add egg and mix well.
  • Fill mushroom caps with the mixture and sprinkle with buttered crumbs and cheese.
  • Place in moderate oven (350°) until lightly browned or under preheated broiler with the broiler rack 3 inches from flame.
  • Allow to brown lightly before serving.
  • Shrimp, finely cut, may be substituted for the crabmeat. Serves 4.
