Ingredients
- 1-10 lbs bag potatoes
- 1/2 cup olive oil
- 4 oz jar of crushed garlic
- 2 stalks leeks
- 2 red onion ( for color)
- 2 lbs bacon
Method
- Preheat oven to 400 degrees
- Peel potatoes- cut potatoes into 8ths. arrange single layer in roasting pan .
- Cover with 1/2 of the olive oil. SAVE SOME FOR LATER Add garlic ---- Peel onions- slice each onion- add ontop on potatoes.
- Cut leeks- Arrange on top of potatoes. Add rest of olive oil- gently mix Bake for 1 hour - toss after 40 mins.
- In seperate cookie sheet - cook bacon until crisp/ Add warm bacon to potatoes and serve --- So easy Even I can make this ....
