Ingredients

  • 1-10 lbs bag potatoes
  • 1/2 cup olive oil
  • 4 oz jar of crushed garlic
  • 2 stalks leeks
  • 2 red onion ( for color)
  • 2 lbs bacon

Method

  • Preheat oven to 400 degrees
  • Peel potatoes- cut potatoes into 8ths. arrange single layer in roasting pan .
  • Cover with 1/2 of the olive oil. SAVE SOME FOR LATER Add garlic ---- Peel onions- slice each onion- add ontop on potatoes.
  • Cut leeks- Arrange on top of potatoes. Add rest of olive oil- gently mix Bake for 1 hour - toss after 40 mins.
  • In seperate cookie sheet - cook bacon until crisp/ Add warm bacon to potatoes and serve --- So easy Even I can make this ....
