Ingredients

  • 2 cups rolled oats
  • 1 cup plain flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • ¼ teaspoon mustard seeds
  • 2 teaspoons curry powder
  • 125 g chilled butter, chopped
  • 1 cup grated Cheddar cheese
  • 1 egg, separated

Method

1. Process oats, flour, baking powder, salt, mustard seeds and curry powder until coarsely ground. Add butter and cheese and process until mixture resembles coarse breadcrumbs.

2. Add lightly beaten egg yolk and enough water to mix to a firm dough. Roll out on a floured surface to 5 mm thickness. Cut into rounds or other shapes.

3. Brush a little beaten egg white over each. Place on a greased baking tray, allow room for spreading.

4. Bake at 190°C for 12–15 minutes, or until cooked. Cool the crackers on trays for 2–3 minutes. Transfer to a wire rack to cool completely.

5. Store crackers in an airtight container.
