Ingredients

  • 1 c. uncooked orzo
  • 1 (7 oz.) jar sundried tomatoes in olive oil
  • 1/2 c. chopped red (sweet) pepper
  • 1/4 c. chopped green onion
  • 3 Tbsp. chopped, fresh parsley
  • 1/2 tsp. dry mustard
  • 1 (4 oz.) can sliced ripe olives, drained
  • 1/2 c. red wine vinegar

Method

  • Cook pasta according to package.
  • Omit any salt, drain the tomatoes and reserve 1 teaspoon of the oil.
  • Chop 2 tablespoons tomatoes.
  • Save the rest for another use.
  • Combine orzo, tomatoes, red pepper, green onions, parsley and olives; toss lightly.
