Ingredients
- 1 c. uncooked orzo
- 1 (7 oz.) jar sundried tomatoes in olive oil
- 1/2 c. chopped red (sweet) pepper
- 1/4 c. chopped green onion
- 3 Tbsp. chopped, fresh parsley
- 1/2 tsp. dry mustard
- 1 (4 oz.) can sliced ripe olives, drained
- 1/2 c. red wine vinegar
Method
- Cook pasta according to package.
- Omit any salt, drain the tomatoes and reserve 1 teaspoon of the oil.
- Chop 2 tablespoons tomatoes.
- Save the rest for another use.
- Combine orzo, tomatoes, red pepper, green onions, parsley and olives; toss lightly.
