- 1/2 Tbsp. olive oil
- 1 medium onion
- 3/4 lb. mushrooms
- 1 clove garlic
- 1/3 to 1/2 c. dry white wine
- 1 lb. Italian sausage
- 1/2 c. red wine (Burgundy works well)
- 1 lb. mostaccioli, cooked
- 1 1/2 to 2 c. marinara sauce or tomato sauce
- 1 tsp. basil or oregano
- salt and pepper to taste
- Jack cheese
Method
- Chop onion, mushrooms and garlic.
- Brown in olive oil in large skillet.
- Add white wine and simmer until reduced.
- Slice Italian sausage and brown with mixture.
- Add red wine.
- When reduced by half, add mostaccioli and marinara or tomato sauce.
- Add basil or oregano, salt and pepper to taste.
