Ingredients

  • 1/2 Tbsp. olive oil
  • 1 medium onion
  • 3/4 lb. mushrooms
  • 1 clove garlic
  • 1/3 to 1/2 c. dry white wine
  • 1 lb. Italian sausage
  • 1/2 c. red wine (Burgundy works well)
  • 1 lb. mostaccioli, cooked
  • 1 1/2 to 2 c. marinara sauce or tomato sauce
  • 1 tsp. basil or oregano
  • salt and pepper to taste
  • Jack cheese

Method

  • Chop onion, mushrooms and garlic.
  • Brown in olive oil in large skillet.
  • Add white wine and simmer until reduced.
  • Slice Italian sausage and brown with mixture.
  • Add red wine.
  • When reduced by half, add mostaccioli and marinara or tomato sauce.
  • Add basil or oregano, salt and pepper to taste.
