Ingredients

  • 1 (8.5 oz.) can pear slices, drained
  • 1 beaten egg
  • 1/4 c. sugar
  • 1/3 c. oil
  • 1/4 c. vinegar
  • 1 3/4 c. flour
  • 2 1/2 tsp. baking powder
  • 3/4 tsp. salt
  • 1/2 c. chopped walnuts
  • 1/2 c. shredded Cheddar

Method

  • Drain pear slices, reserving 1/2 cup syrup.
  • Chop pears.
  • In a bowl, combine pears and reserved syrup with egg and oil.
  • In large mixing bowl, stir together the flour, sugar, baking powder and salt.
  • Stir in cheese and walnuts.
  • Make a well in the center of the flour mixture and add the egg mixture all at once.
  • Stir until the mixture is just moistened.
  • (Batter will be lumpy.)
