Ingredients
- 1 (8.5 oz.) can pear slices, drained
- 1 beaten egg
- 1/4 c. sugar
- 1/3 c. oil
- 1/4 c. vinegar
- 1 3/4 c. flour
- 2 1/2 tsp. baking powder
- 3/4 tsp. salt
- 1/2 c. chopped walnuts
- 1/2 c. shredded Cheddar
Method
- Drain pear slices, reserving 1/2 cup syrup.
- Chop pears.
- In a bowl, combine pears and reserved syrup with egg and oil.
- In large mixing bowl, stir together the flour, sugar, baking powder and salt.
- Stir in cheese and walnuts.
- Make a well in the center of the flour mixture and add the egg mixture all at once.
- Stir until the mixture is just moistened.
- (Batter will be lumpy.)
